Christmas morning bring lots of joy to children all across the globe. But us parents it is a completely different story, at least in my house. Being the elves we are we foolishly wait until Christmas Eve to wrap ALLLLL their presents. It is a lovely tradition but when the kids wake up after we’ve barely put the last gift under the tree there is no describing the exhaustion we feel. Watching the kids open their piles of gifts can take a while and depending on the time we are awaken who knows what time we’ll get to breakfast and being that the Christmas feast must be finished off we need to make it as quick and easy as possible. The last few years we have started making breakfast casseroles. They are prepared the night before and we just pop them in the oven.
